Oat Flour-

Crust-

3 cups oat flour

4-8 T unsalted butter

1-2 T cold water

1/4 t salt

~

Crumble Topping-

1 & 1/2 cups oat flour
1/3 cup granulated sugar
3/4 cup dark brown sugar, packed
3/4 cup butter, melted

1 t cinnamon

1/4 t each nutmeg, allspice, cloves

1/4 t salt

~

Equipment:

Large knife

Cutting board

Food processor

Coffee grinder

Spoon/spatula

1 large bowl

2 small bowls

Deep dish pie pan

Cooling rack

~

First, the filling:

  1. Turn the oven on to 400 degrees farenheit

  2. Mix the vanilla, lemon juice, and melted butter in a large bowl

  3. Mix the sugar and spices in a small bowl

  4. Peel, core, & slice the apples. As you go, place the apple slices into the large bowl with the vanillla, lemon juice, and melted butter.

  5. Stir the sugar and spice mixture as well as the vanilla, lemon juice, and melted butter into the apples, making sure all are evenly coated.

~

Then, the crust:

  1. Blend oats in the food processor

  2. Use the coffee grinder to grind the oat flour further to be smaller and more even in consistency. Put the fully ground oat flour into a small bowl.

  3. Put 2 1/2 cups oat flour back into the food processor with 4 T of butter, 1 T of cold water, and the salt.

  4. Blend it all together, adding more butter and cold water as needed until a dough forms

  5. Sprinkle some oat flour onto a clean work surface & roll out the dough to be large enough to fit into your pie pan

  6. Grease your pie pan with butter to ensure the crust won't stick

  7. Roll your dough into your pie pan, pressing into pan as needed to create a uniform surface

~

Now, the crumble:

  1. Reusing the small bowl to hold the oat flour when making the crust, blend all the ingredients together until the mixture becomes clumpy and ready to be sprinkled on top

~

Lastly, put it all together:

  1. Scoop the filling into the uncooked crust within the pie pan

  2. Sprinkle the crumble on top

  3. Place the pie into the pre-heated oven in the middle rack, cooking for one hour and spinning 90 degrees halfway through the cooking process to ensure the pie cooks evenly

  4. Place the pie onto a cooling rack & wait at least 1 1/2 hours, ideally 4, before slicing. This is to give the filling time to come together.

  5. Slice up, serve & enjoy!
